Ingredients:
– 1tsp Olive Oil
– 1 med sliced onion
– 1 cup mushrooms
– 3 handfuls spinach
– 2 garlic cloves, minced
– 1 1/2 cups milk (almond milk works)
– 5 eggs
– ¼ cup grated parmesan cheese
– 1 tbs minced fresh basil or 2 tsp dried basil
– ½ tsp black pepper
– 1/8 tsp ground nutmeg
Procedure:
– Preheat oven to 350F. Lightly spray 9-inch pie pan with nonstick cooking spray.
– Heat oil in med skillet over med-high heat. Add onion slices and cook until browned (carmelized), add mushrooms and garlic, cook for about 1 minute then add spinach leaves; cook for another 2-3 minutes.
– Spread mixture evenly on bottom of pie pan.
– Combine milk, eggs, cheese, basil, pepper and nutmeg in a med bowl. Pour over mixture.
– Bake 50 min or until inserted knife comes out clean.
Variation: can use other vegetables or diced ham, turkey or cooked bacon in skillet; follow rest of recipe.
