Yummy Globe Kids: Red Lentil Porridge

Ingredients:
1 tsp olive oil
1 tsp butter
1 garlic clove,
1/8 cup onion,
1 carrot, diced
1/8 cup corn, frozen
1/8 cup peas, frozen
¼ cup red lentils
½ cup water
A dash of cumin
A dash of salt

Procedure:
1. In a small saucepan, melt butter with olive oil.
2. Once melted add onions, garlic and vegetables; cook until everything is tender about 3 minutes.
3. Add lentils and mix well, coating lentils with butter and oil.
4. Add water, bring to a boil, add cumin then lower temperature cover and simmer until water is absorbed about 15-20 minutes.
5. Add a dash of salt to taste.
6. Let cool and serve.

Yield: 2 servings
