World Cuisine and Food Sensitivties

There is so much talk about food sensitivities and all kinds of diets to help address the consequences of suffering discomfort, or in some cases, severe health issues from the intake of food. I actually have a lactose and gluten intolerance and while many times, I do not feel like eating much, I know that food is an integral and intimate part of each and every one of our lives. While the effects of what you consume take their toll within 24 hours, really what you choose to put in your body has effects that can last a lifetime.
When I attended culinary school to learn the techniques of cooking, I challenged myself to cook gluten free the whole 12 months of my learning experience. I managed to do that except for one recipe in my baking class where the gluten was needed to braid the bread. Who has to eat braided bread? Not anyone, but ok that was the assignment, and I was graded on the bread and the braid. I am not sure how it tasted, but it looked nice, and what’s the point of that? If I am cooking or baking it, I better be able to eat it! 🙂 Anyone can enjoy delicious homemade gluten free bread by the way. I made a gluten free cranberry biscuit that was delicious!
My favorite class was global cuisine. Where else could I get a combination of two worlds I love so much: international relations and food? Not to mention that my professor was fabulous and by the way, she has celiac disease. We had wonderful discussions on the versatility and richness of foods from all over the world.
I realized, while taking this class, that the world actually is my oyster when it comes to eating food that is exciting and healthy. It just requires a little bit of creativity. There are many options for food sensitive foodies when taking a close look at food and ingredients from Latin American, Mediterranean, and Asian countries and cultures.
Yummy Globe Community on Facebook is a good place to explore recipes. Most recipes are gluten free, and it is easy to substitute for those ingredients that are not food sensitive (use gluten free pasta for the pasta dishes and/or omit the dairy if you cannot have it, for example).
