Crustless French Quiche
Ingredients
- 1 tsp olive oil
- 1 med onion, sliced
- 1 cup mushrooms
- 3 handful spinach
- 2 cloves garlic, minced
- 1 1/2 cup milk (almond milk can substitute)
- 5 each eggs
- 1/4 cup parmesan cheese, grated
- 1 tsp fresh basil, minced (or 2 tsp dried basil)
- 1/2 tsp black pepper
- 1/8 tsp ground nutmeg
Instructions
- 1. Preheat oven to 350F. Lightly spray 9-inch pie pan with nonstick cooking spray.2. Heat oil in medium skillet over med-high heat. Add onion slices and cook until browned (caramelized), add mushrooms and garlic, cook for about one minute then add spinach; cook for 2-3 minutes. 3. Spread mixture evenly on bottom of pie pan.4. In a separate medium bowl, combine milk, eggs, cheese, basil, pepper and nutmeg. Pour over mixture.5. Bake 50 minutes or until inserted knife comes out clean.
Notes
Variation: you can use other vegetables or diced ham, turkey or cooked bacon in skillet; then follow rest of receipt.
