Carrot~Apple Soup
An easy, delicious soup with simple ingredients right from your kitchen! This is one of our family favorites. A quick and healthy meal whipped up in less than one hour. Pair it with a nice salad or corn toritillas or both!
Equipment
- Blender, immersion blender or food processor
Ingredients
- 5-6 Med Carrots, chopped
- 2 Med Potatoes, chopped
- 1 Med Onion, chopped
- 2 Cloves Garlic, chopped
- 4 Cups Water or Vegetable Stock
- 1 Bayleaf
- 2-3 Med Apples, peeled, cored and chopped
- Salt & Pepper
Instructions
- In a large pot, place carrots, potatoes, onions, garlic, bay leaf and add water or vegetable stock.
- Bring to a boil and reduce heat, cover and simmer for 10 minutes.
- Add apples and bring to a boil. Reduce heat, cover and simmer for 20 minutes.
- Remove bayleaf. Place soup in a food process or blender or place an immersion blender in the pot to puree until smooth.
- Season to taste.
