1. Preheat oven to 350F. Lightly spray 9-inch pie pan with nonstick cooking spray.2. Heat oil in medium skillet over med-high heat. Add onion slices and cook until browned (caramelized), add mushrooms and garlic, cook for about one minute then add spinach; cook for 2-3 minutes. 3. Spread mixture evenly on bottom of pie pan.4. In a separate medium bowl, combine milk, eggs, cheese, basil, pepper and nutmeg. Pour over mixture.5. Bake 50 minutes or until inserted knife comes out clean.
Notes
Variation: you can use other vegetables or diced ham, turkey or cooked bacon in skillet; then follow rest of receipt.
